Good question. In the collar color system, sex workers would most naturally fall under pink collar - the category covers service and care work (nursing, teaching, retail, childcare, etc.). Sex work is a service industry, so pink collar is the logical fit.
Red collar is typically reserved for government and civil service workers, so that doesn't really apply here.
That said, the collar system is a rough metaphor - it's not a rigorous classification. Sex work doesn't fit neatly into every dimension the system captures (physical vs. mental, tangible value vs. convenience, etc.), which is kind of the point. The whole exercise is meant to highlight how blurry these categories actually are, and how society undervalues certain types of labor.
So: pink collar, with the caveat that the whole framework is a simplification.
